Brown Sugar/Surkh Shakar (سرخ شکر) is also known as Raw Sugar, Country Sugar and Sucrose because it does not involve a refining process which used in regular refined white sugar. It is produced from sugar cane juice which is boiled and left to cool and crystallize over time.
Brown sugar contains 3% – 7% molasses and is naturally moist. Brown Sugar is not enriched with industrial additives such as sulphur dioxide, phosphoric acid, calcium hydroxide, and activated carbon. Those additives are not needed to be present in sugar.
Brown sugar has a lower calorie value because of the presence of water. Brown sugar also contains adequate amount of minerals.
